Cochinita means “little pig,” and Pibil refers to an ancient Mayan cooking method where the meat is slow-cooked in an underground oven. This classic dish from the Yucatán region is known for its deep red color, earthy flavor, subtle smokiness, and refreshing citrusy note.

Recipe (4 servings):

  1. Mix the spice blend with 100 ml of orange juice in a bowl to make the marinade.
  2. Cut 1.2 kg of pork shoulder or 1.5 kg of pork neck/chops into large pieces and remove the bones.
  3. Marinate the meat in the sauce. Add 200 ml of orange juice to the pot or slow cooker.
  4. Cook in a slow cooker on low for 8 hours or in a pot on very low heat for 4–6 hours.
  5. Shred the meat and add a few spoonfuls of the cooking liquid.
  6. Serve in tacos or tortillas with red onion rings and guacamole.

Tip: Finish the dish with Don Cabron Macha de Dos Chiles sauce for the perfect spicy finishing touch.
